In a heavy-bottomed or copper pot, heat the olive oil. Add the popcorn and swirl it around to ensure each kernel is coated with oil, creating an even layer throughout the pot. Sprinkle the salt over the popcorn. Cover the pot with a tightly fitting lid and cook over high heat. Have a large bowl and hot pads or towels ready. Once the popping slows to a stop, carefully remove the pot from the heat. Take off the lid and pour the popcorn into the bowl.
